Butternut and Bleu Cheese

My portion of the fridge is pretty bare right now (going food shopping tomorrow!), so for lunch today I had to pull together some bites from canned soup, bleu cheese and whole wheat tortillas. Luckily, the canned soup I have is Amy’s, so I knew that it would be delicious despite the tin.

I picked the butternut squash soup and then layered half of a whole wheat tortilla with a few slices of creamy bleu cheese. Just a few minutes on the stove and I had a crispy, crunchy quesadilla alongside a hot bowl of soup. I skipped the spoon in favor of dipping with the little bleu cheese-filled triangles:

This was so comforting and took just a few minutes to put together. What’s your favorite quick-fix lunch?
