The restaurant where I waitress at home school serves up really delicious mussels in a white wine sauce. I was missing these mussels recently when I discovered that Whole Foods sells shucked and poached mussels for less than 8 bucks per pound. I grabbed a quarter pound container of these mussels along with a small container of roasted potatoes, all totaling under $3, and I was on my way.
While mussels taste delicious just poached all by themselves, I spruced them up a bit by placing them in a saucepan with the potatoes, 1 chopped clove of garlic, a splash of white wine and about a tablespoon of lemon juice. I let everything sit for about 5 minutes on medium-low and before I knew it, I had a beautifully delicious and easy meal to plop in a bowl and eat with a spoon.
The trick with mussels is to keep it simple. As with many other fruits of the sea, using lemon and garlic are usually a surefire way to make things taste delicious without overpowering the seafood item itself. This meal is very easily duplicated, and would be perfect for a rainy Sunday evening.
