Lemon Sole in a Pinch

Dinner took a total of 8 minutes to make tonight and here’s why:

1. Lemon sole cooks really quickly

2. I bought my side dish of basil and orange mashed sweet potatoes yesterday at Whole Foods… for exactly 30 cents (it was on sale)

3. I’m practicing my Zumba routine for my first class this weekend(!), so I wanted to spend less time cooking and more time dancing

Lemon Sole in a Pinch

1/3 pound fillet lemon sole

3/4 tablespoon Earth Balance, or equivalent

Lemon wedge

Serves 1

Heat pan to medium-high and add 1/2 tablespoon Earth Balance. Place sole in the pan and lower the heat to medium. Let sit for 2-3 minutes on each side, adding the remaining Earth Balance after flipping. Plate with a squeeze of lemon and your choice of side. Enjoy while watching a “Teen Mom” repeat and doing salsa steps in your head.
