Simple Salmon

Salmon is one of my favorite fish to eat. Whether raw or grilled, baked or smoked, I like to eat it at any time of year and at any time of day (who doesn’t love a bagel with lox for breakfast?). Tonight for dinner I made salmon with a boiled sweet potato and boiled then sautéed garlicky broccoli.

Simple Salmon

1/3 pound fillet of salmon, skin on

A pinch each of paprika, sea salt and black pepper

Squeeze of lemon

1/2 tablespoon canola oil

Serves 1

Add canola oil to a pan on medium and raise the heat to medium-high. Rub the paprika, salt and black pepper into the flesh of the salmon and place the salmon in the pan skin-side down. Reduce the heat to medium and let the salmon cook on each side for 5-7 minutes. Plate the salmon and serve with a squeeze of lemon.

I like to top salmon with a grainy, horseradish mustard, but it also tastes nice with honey mustard, Dijon mustard or just a drizzle of olive oil and a dollop of Greek yogurt.
